Step 1
If using fresh noodles, separate them carefully. If using dried, soak according to package directions. Cut Chinese broccoli into bite-sized pieces.
Step 2
In a small bowl, whisk together dark soy sauce, light soy sauce, oyster sauce, sugar, and white vinegar. Set aside.
Step 3
Heat 1 tbsp oil in a wok over high heat. Add garlic and stir-fry for 15 seconds until fragrant. Add pork and stir-fry until cooked through and lightly browned, about 3-4 minutes. Remove pork and set aside.
Step 4
Add 1 tbsp oil to the wok. Crack eggs into the wok and scramble quickly. Push eggs to the side.
Step 5
Add remaining 1 tbsp oil and noodles to the wok. Pour about half of the sauce over the noodles and stir-fry vigorously for 2-3 minutes until lightly caramelized and well coated.
Step 6
Add Chinese broccoli and cooked pork back to the wok. Add the remaining sauce. Stir-fry for another 2-3 minutes until broccoli is tender-crisp and everything is thoroughly mixed.
Step 7
Serve immediately.
