Step 1
In a mortar and pestle, pound garlic, white pepper, and cilantro roots until a fine paste forms. (Alternatively, finely mince and mix).
Step 2
In a large bowl, combine the paste with fish sauce, light soy sauce, oyster sauce, palm sugar, and coconut milk. Whisk until sugar is dissolved.
Step 3
Add thinly sliced pork to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 2 hours, or preferably overnight.
Step 4
Soak wooden skewers in water for 30 minutes to prevent burning. Thread the marinated pork onto the skewers, folding the slices accordion-style.
Step 5
Preheat grill to medium-high heat. Grill the pork skewers for 3-5 minutes per side, brushing with any remaining marinade or extra coconut milk, until cooked through and nicely caramelized.
Step 6
Serve hot, traditionally with sticky rice.
