Step 1
Rinse the basmati rice under cold water and soak for 30 minutes.
Step 2
In a large pot, heat oil and sauté sliced onions until golden brown.

Add ginger and garlic, cook for 2 minutes until fragrant.

Stir in bay leaves, cloves, cinnamon, and cumin seeds; cook for another minute.

Add turmeric, mixed vegetables, and salt; stir well and cook for 5 minutes.

Add soaked rice and water; bring to a boil, then reduce to a simmer, cover, and cook for 20 minutes.

Remove from heat and let it sit covered for another 10 minutes to fluff.
