Step 1
Drain the soaked chickpeas thoroughly. In a food processor, combine chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, salt, and baking soda.

Pulse until the mixture is finely ground but not pureed. It should resemble coarse meal. Add flour and pulse again to combine.

Transfer the mixture to a bowl, cover, and refrigerate for at least 30 minutes to firm up.

While the falafel mixture chills, prepare the tahini sauce: Whisk together tahini, lemon juice, water, and minced garlic until smooth.

Heat vegetable oil in a deep pot or Dutch oven to 350°F (175°C). Form the falafel mixture into small patties or balls.
Step 6
Carefully fry falafel in batches for 3-5 minutes, turning occasionally, until golden brown and cooked through. Do not overcrowd the pot.
Step 7
Remove falafel with a slotted spoon and place on a wire rack lined with paper towels to drain excess oil.
Step 8
Serve hot with tahini sauce, pita bread, and fresh vegetables.
