Step 1
Preheat oven to 375°F (190°C).
Step 2
Cook quinoa according to package instructions.
Step 3
In a skillet, heat olive oil and sauté spinach until wilted.
Step 4
In a bowl, mix cooked quinoa, olives, sautéed spinach, feta, parsley, salt, pepper, and cumin.
Step 5
Cut the tops off the bell peppers and remove seeds. Stuff peppers with the quinoa mixture.
Step 6
Place stuffed peppers in a baking dish and bake for 25-30 minutes until peppers are tender.
