Step 1
In a large pot, heat olive oil over medium heat and brown chicken thighs on both sides.
Step 2
Remove chicken and set aside. In the same pot, sauté chopped onion, garlic, and red bell pepper until softened.
Step 3
Stir in cumin, turmeric, salt, and pepper; add rice and cook for 2 more minutes.
Step 4
Add chicken back into the pot, pour in chicken broth, and bring to a boil.
Step 5
Reduce heat, cover, and let simmer for 20 minutes until rice is cooked.
Step 6
Add peas during the last 5 minutes of cooking, fluff the rice with a fork and garnish with cilantro before serving.
