Step 1
Soak wooden skewers in water for at least 30 minutes. In a bowl, combine chicken cubes with coconut milk, curry powder, turmeric, sugar, and fish sauce. Marinate for at least 1 hour, or up to 4 hours in the refrigerator.
Step 2
While chicken marinates, prepare the peanut sauce: In a saucepan, combine peanut butter, coconut milk, red curry paste, tamarind paste, sugar, fish sauce, and water. Heat over medium-low, whisking constantly until smooth and thick. Simmer gently for 5 minutes.
Step 3
Thread marinated chicken onto the soaked skewers.
Step 4
Preheat a grill or grill pan to medium-high heat. Grill skewers for 3-5 minutes per side, brushing with any leftover marinade, until chicken is cooked through and lightly charred.

Serve hot chicken satay skewers with the warm peanut dipping sauce.
