Step 1
In a large bowl, combine ground lamb, grated onion, minced garlic, chopped parsley, cumin, coriander, smoked paprika, cayenne pepper (if using), 1/2 tsp salt, and 1/4 tsp pepper. Mix well to combine.
Step 2
Form the lamb mixture into 8-10 elongated oval patties or onto skewers if grilling.

Prepare the yogurt-cucumber dip: In a small bowl, combine Greek yogurt, grated cucumber, chopped mint, lemon juice, salt, and pepper. Chill until ready to serve.
Step 4
Heat olive oil in a large skillet or grill pan over medium-high heat. Cook kofta for 4-6 minutes per side, or until cooked through and nicely browned.
Step 5
Serve kofta immediately with the chilled yogurt-cucumber dip, pita bread, and a side salad.
