Step 1
Soak rice noodles in room temperature water for 30 minutes until pliable, drain well
Step 2
Mix tamarind paste, fish sauce, and palm sugar together in small bowl, set aside
Step 3
Heat 1.5 tbsp oil in large wok over high heat, add minced garlic and stir-fry for 30 seconds
Step 4
Add shrimp and cook until pink, about 2-3 minutes, push to side of wok
Step 5
Crack eggs into wok and scramble slightly, then mix with shrimp
Step 6
Add drained noodles and pour tamarind sauce over, toss everything together for 2 minutes
Step 7
Add bean sprouts and chopped scallions, toss for 1 minute
Step 8
Transfer to serving plates, top with crushed peanuts and lime wedges
