Step 1
If using bamboo skewers, soak them in water for at least 30 minutes to prevent burning.

Cut chicken thighs into uniform 1-inch bite-sized pieces. Thread 4-5 pieces onto each skewer.

For the tare glaze, combine soy sauce, mirin, sake, and sugar in a small saucepan. Bring to a simmer over medium heat and cook, stirring, until slightly reduced and thickened, about 5-7 minutes.

Preheat a grill or broiler to medium-high heat. Lightly oil the grates or broiler pan.
