Step 1
Bring chicken or vegetable broth to a boil in a pot. Add lemongrass, galangal, kaffir lime leaves, and smashed chilies.
Step 2
Simmer for 10-15 minutes to infuse the broth with the aromatics. Strain out aromatics if desired, or leave them in.
Step 3
Add mushrooms to the simmering broth and cook for 3-5 minutes until tender.
Step 4
Add shrimp and cook until just pink and curled, about 2-3 minutes. Do not overcook.
Step 5
Remove from heat. Stir in fish sauce, lime juice, and sugar. Taste and adjust seasoning as needed.
Step 6
Garnish with fresh cilantro and a drizzle of chili oil if desired. Serve hot.
