Step 1
Combine beef broth, star anise, cinnamon stick, cloves, and sliced ginger in a large pot. Bring to a boil, then reduce heat and simmer gently for at least 30 minutes to infuse flavors. Strain out solids.
Step 2
Add fish sauce to the strained broth and season with salt to taste. Keep the broth hot over low heat.
Step 3
Bring a separate pot of water to a boil and cook ramen noodles according to package directions. Drain well.
Step 4
Thinly slice the sirloin steak against the grain. It should be very thin so it cooks quickly in the hot broth.
Step 5
Prepare your garnishes: wash bean sprouts, pick mint and basil leaves, slice lime into wedges, and thinly slice jalapeño.
Step 6
Divide cooked ramen noodles among serving bowls. Arrange the thinly sliced raw beef over the noodles.
Step 7
Ladle the hot pho-inspired broth over the beef and noodles. The heat of the broth will gently cook the beef.
Step 8
Serve immediately with a side plate of bean sprouts, fresh mint, basil, lime wedges, jalapeño slices, hoisin sauce, and sriracha for individual customization.
