Step 1
Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius). Line two large baking sheets with silicone baking mats or parchment paper.
Step 2
Combine the flour, baking soda, baking powder, salt, and cinnamon in a small bowl and set aside.
Step 3
In a mixing bowl, beat the softened butter, granulated sugar, and brown sugar on medium-high speed for 1 minute, until light and fluffy.

Add the egg and vanilla extract, and beat on medium-high speed for an additional 1 minute.

Add the dry ingredient mixture and beat on medium speed until just combined.
Step 6
Beat in the oatmeal on low speed, then mix in any add-ins until evenly distributed.
Step 7
Use a 1 ½ to 2 Tablespoon cookie scoop to measure out dough, roll it into balls, and place on the prepared cookie sheet, about 1 ½ inches apart.
Step 8
Gently press down the tops of the cookie dough balls until slightly flattened.
Step 9
Bake in the preheated oven for 8-10 minutes until the top is just set and the edges are lightly browned.
Step 10
Let the cookies sit on the baking pan for 5 minutes before transferring to a wire rack to cool.
