Step 1
Marinate the chicken thighs with salt, pepper, ginger, and garlic, then set aside for 15 minutes.
Step 2
In a large pot, heat vegetable oil over medium heat. Sauté chopped onions until translucent.

Add chopped bell pepper and tomatoes to the pot, cooking until the mixture thickens.

Stir in the rice, broth, thyme, salt, and pepper. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes.

While the rice cooks, grill the marinated chicken over medium heat until cooked through and juices run clear.
