Step 1
Marinate chicken thighs with garlic, thyme, cayenne pepper, salt, and pepper. Let sit for 30 minutes.
Step 2
In a large pot, heat vegetable oil and sauté chopped onions and red bell pepper until soft.

Add tomato puree, bay leaves, and chicken broth to the pot. Stir and simmer for 10 minutes.
Step 4
Add the rice, stir well, cover, and cook on medium heat for 25 minutes.
Step 5
Meanwhile, in another pan, fry the marinated chicken until golden brown on both sides, about 10 minutes.
Step 6
Serve jollof rice topped with spicy chicken.
