Step 1
Dice sweet potatoes, red onion. Mince garlic and grate ginger. Strip kale leaves from stems and chop.
Step 2
Heat olive oil in a large pot or Dutch oven over medium heat. Sauté onion until softened, about 5 minutes. Add garlic, ginger, cumin, coriander, smoked paprika, and red pepper flakes, cooking for 1 minute until fragrant.
Step 3
Stir in diced sweet potatoes, crushed tomatoes, and vegetable broth. Bring to a simmer, then cover and cook for 15-20 minutes, or until sweet potatoes are tender.
Step 4
Whisk in creamy peanut butter until fully incorporated and the stew is creamy.
Step 5
Add chopped kale to the stew and cook for another 5 minutes, until kale is wilted and tender-crisp. Season with salt and pepper to taste.
Step 6
Serve hot, garnished with chopped peanuts and fresh cilantro (optional). Best served with a side of rice or crusty bread.
