Step 1
Finely mince pork shoulder. Thinly slice pork belly. Mince shallots and garlic.
Step 2
Combine minced pork with half of the minced shallots and garlic, 1 tbsp fish sauce, 1 tsp sugar, and black pepper. Form into small patties.
Step 3
Marinate pork belly slices with remaining shallots and garlic, 1 tbsp fish sauce, and 1 tsp sugar. Marinate pork for at least 30 minutes, or up to 4 hours.
Step 4
Prepare Nuoc Cham dipping sauce (fish sauce, water, sugar, lime juice, chili, garlic). Cook vermicelli noodles according to package.
Step 5
Grill pork patties and pork belly over medium-high heat until cooked through and slightly charred, about 4-6 minutes per side.
Step 6
Assemble bowls with a bed of lettuce, vermicelli noodles, fresh herbs, pickled vegetables, and grilled pork. Serve with plenty of Nuoc Cham.
