Step 1
Sauté chopped onion in 1 tbsp olive oil until softened, about 5 minutes. Add minced garlic and sauté for 1 minute more. Add spinach and cook until wilted, squeezing out excess liquid. Let cool.
Step 2
In a large bowl, combine cooled spinach mixture, crumbled feta, ricotta (if using), eggs, dill, parsley, salt, and pepper. Mix well.
Step 3
Preheat oven to 375°F (190°C). Melt butter and have phyllo dough ready, covered with a damp cloth to prevent drying.
Step 4
Lay one sheet of phyllo on a clean surface. Brush lightly with melted butter. Place another sheet on top and butter it. Cut the double layer lengthwise into 3-4 strips.
Step 5
Place a teaspoon of filling at one end of a strip. Fold one corner over the filling to form a triangle. Continue folding like a flag until you reach the end of the strip.
Step 6
Place finished triangles on a baking sheet. Brush the tops with any remaining melted butter.
Step 7
Bake for 20-25 minutes, or until golden brown and crispy. Serve warm.
