Step 1
Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper.
Step 2
On the sheet pan, toss the sausage, bell peppers, red onion, and broccoli with olive oil, salt, and pepper. Spread in an even layer.
Step 3
Roast for 15-20 minutes, stirring halfway through, until the vegetables are tender-crisp and the sausage is cooked through.
Step 4
While the veggies and sausage roast, whisk the eggs and milk in a medium bowl.
Step 5
Remove the sheet pan from the oven. Pour the egg mixture evenly over the roasted ingredients. Sprinkle with shredded cheese.
Step 6
Return to the oven and bake for another 10-15 minutes, or until the eggs are set and the cheese is melted and bubbly.
Step 7
Carefully remove from oven. Let cool slightly, then cut into portions and serve.
