Step 1
Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.
Step 2
In a saucepan, combine water, butter, and salt. Bring to a rolling boil over medium-high heat until butter is melted.

Remove from heat. Add flour all at once and stir vigorously with a wooden spoon until a smooth ball of dough forms and pulls away from the sides of the pan.

Return to low heat and cook for 1-2 minutes, stirring constantly, to dry out the dough. Transfer dough to a mixing bowl.

Beat in eggs one at a time, incorporating each egg fully before adding the next. The dough should be smooth and glossy. Stir in grated Gruyère, Dijon (if using), and pepper.
Step 6
Drop tablespoonfuls of dough onto the prepared baking sheet, leaving space between them. Bake for 20-25 minutes, or until puffed, golden brown, and hollow.
Step 7
Serve warm immediately. They can be re-crisped in a warm oven.
