Step 1
Prepare the teriyaki sauce: In a small saucepan, combine soy sauce, mirin, sake, brown sugar, grated ginger, and minced garlic. Bring to a simmer over medium heat, stirring until the sugar dissolves. Reduce heat to low and let it thicken slightly.
Step 2
Pat salmon fillets dry with paper towels. Season lightly with salt and pepper.
Step 3
Heat vegetable oil in a large non-stick skillet over medium-high heat.
Step 4
Once the oil is hot, place salmon fillets skin-side down (if skin-on) and cook until the skin is crispy.
Step 5
Flip the salmon and cook for another 3-4 minutes, or until cooked through to your desired doneness.
Step 6
Pour about half of the teriyaki sauce over the salmon in the skillet and let it simmer, spooning the glaze over the fish.
Step 7
Remove salmon from the skillet and transfer to serving plates.
Step 8
Garnish with sesame seeds and sliced green onions. Serve immediately with the remaining teriyaki sauce on the side.
