Step 1
Cut chicken into bite-sized cubes, about 0.75 inch pieces
Step 2
Whisk together rice vinegar, soy sauce, sugar, and sesame oil in small bowl, set aside
Step 3
Heat 1.5 tbsp oil in wok over high heat, add chicken in batches and cook until golden, set aside
Step 4
Add remaining oil to wok, add Sichuan peppercorns and dried chilies, toast for 1 minute
Step 5
Add minced garlic and ginger, stir-fry for 30 seconds until fragrant
Step 6
Pour sauce mixture into wok and bring to simmer
Step 7
Return chicken to wok, add peanuts and toss everything together for 1-2 minutes

Garnish with sliced scallions and serve over steamed rice
