Step 1
Pat fish fillets dry with paper towels. Season both sides with salt and pepper.
Step 2
Heat olive oil in a large skillet over medium-high heat. Add fish fillets and sear for 3-4 minutes per side, until golden brown and cooked halfway through.
Step 3
Remove fish from the skillet and set aside. Add sliced garlic to the skillet and sauté for 30 seconds until fragrant.
Step 4
Stir in halved cherry tomatoes and capers. Cook for 3-5 minutes, gently smashing some tomatoes, until they start to soften and release their juices.

Pour in white wine or vegetable broth and bring to a simmer. Return fish to the skillet, nestling it into the sauce.

Cover and cook for another 3-5 minutes, or until fish is fully cooked through and flakes easily. Stir in fresh parsley.
Step 7
Serve immediately with lemon wedges, perhaps alongside rice or crusty bread.
