Step 1
In a large pot, heat olive oil over medium heat and sauté chopped onion and garlic until softened (about 5-7 minutes).

Add the ham hock and chicken broth; bring to a simmer.

While it's simmering, wash and chop the collard greens, removing the stems.

Stir collard greens into the pot; reduce heat to low and cover, cooking for 45 minutes, stirring occasionally.

Remove the ham hock, shred the meat, and return to the pot, mixing well before serving.
