Step 1
Pat the sirloin steak dry with paper towels. Season generously on all sides with salt and black pepper. Mince the garlic cloves.
Step 2
Heat a cast-iron skillet or heavy-bottomed pan over high heat until smoking. Add 5g of butter. Once butter is melted and slightly browned, carefully place the seasoned steak in the pan. Sear for 2-4 minutes per side for medium-rare, or longer for desired doneness. For medium-rare, aim for an internal temperature of 52-55°C.
Step 3
Remove the steak from the pan and place it on a cutting board. Tent loosely with foil and let it rest for at least 5 minutes. This allows the juices to redistribute, ensuring a tender steak.
Step 4
While the steak rests, reduce the heat in the same skillet to medium. Add the remaining 5g of butter. Once melted, add the minced garlic and sauté for 1 minute until fragrant. Add the fresh spinach to the pan. Cook, stirring frequently, until the spinach wilts down completely, about 3-4 minutes.
Step 5
Stir in the cream cheese and heavy cream until melted and combined. Add the grated Parmesan cheese, stirring until a smooth, creamy sauce forms around the spinach. Season with a pinch more salt and pepper to taste.
Step 6
Slice the rested steak against the grain into desired portions. Serve immediately with the hot creamed spinach on the side.
