Step 1
In a small bowl, whisk together soy sauce, honey, rice vinegar, grated ginger, minced garlic, sesame oil, and cornstarch. Set aside.
Step 2
Cut chicken breast into 1-inch pieces. Chop broccoli into florets, julienne carrots, and slice the red bell pepper.
Step 3
Heat olive oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
Step 4
Add broccoli, carrots, and bell pepper to the skillet. Stir-fry for 5-7 minutes, until vegetables are tender-crisp.
Step 5
Return chicken to the skillet with the vegetables. Stir the reserved sauce and pour it over the chicken and vegetables. Cook, stirring constantly, until the sauce thickens and coats everything, about 1-2 minutes.

Serve immediately over rice or noodles, if desired.
