Step 1
Cook quinoa according to the package instructions. Allow it to cool slightly.

Season the chicken breast with olive oil, lemon juice, salt, and pepper.

Grill chicken breast over medium heat until it reaches an internal temperature of 74°C (about 15-20 minutes). Let it rest before slicing.

In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, and parsley.

Crumble feta cheese over the salad. Add a bit more lemon juice to taste.
