Step 1
Bring a large pot of water to a boil. Blanch the spinach for 30 seconds to 1 minute, until vibrant green. Immediately transfer to an ice bath to stop cooking.
Step 2
Squeeze the blanched spinach gently to remove excess water. Form into a tight ball or log and slice into 1-inch segments.
Step 3
In a small bowl, use a mortar and pestle (or spice grinder) to lightly crush the toasted sesame seeds. Combine with soy sauce, sugar, mirin, and water to create the gomae dressing.
Step 4
In a mixing bowl, gently toss the spinach with the sesame dressing until well coated.
