Step 1
Make shallow slits on the hard-boiled eggs. In a small amount of oil, lightly fry the eggs until slightly golden. Remove and set aside.
Step 2
In the same pan, add remaining oil. Add cumin seeds and let them splutter. Add chopped onion and sauté until golden brown.
Step 3
Stir in ginger-garlic paste and green chilies. Sauté for 2 minutes until fragrant.

Add tomato puree and cook until the oil begins to separate, about 10-12 minutes.

Stir in turmeric powder, coriander powder, red chili powder, and salt. Cook for 2 minutes, adding a splash of water if needed to prevent burning.
Step 6
Add 1 to 1.5 cups of water and bring the gravy to a simmer. Add the fried hard-boiled eggs.
Step 7
Cover and cook for 8-10 minutes, allowing eggs to absorb the flavors. Stir in garam masala and garnish with fresh coriander.

Serve hot with rice or roti.
