Step 1
Heat olive oil in a large oven-safe skillet over medium-high heat. Add ground breakfast sausage and cook, breaking it up with a spoon, until browned. Drain any excess grease.
Step 2
Add sliced mushrooms and diced green bell pepper to the skillet. Sauté for 5-7 minutes until vegetables are softened.
Step 3
Stir in the fresh spinach and cook until wilted, about 2-3 minutes. Season the mixture with salt and pepper.
Step 4
Make two small wells in the sausage and vegetable mixture. Crack an egg into each well.
Step 5
Cover the skillet (or transfer to a preheated oven at 375°F/190°C) and cook for 5-8 minutes, or until the eggs are cooked to your desired doneness.
Step 6
Sprinkle with shredded cheddar cheese, if using, and cover for another minute until melted. Serve directly from the skillet.
