Step 1
Preheat oven to 375°F (190°C).

Heat olive oil in a 10-inch oven-safe, non-stick skillet over medium heat. Add diced potatoes and cook for 8-10 minutes, stirring occasionally, until tender and lightly browned.

Add diced red onion to the skillet and cook for another 3-4 minutes until softened.

In a large bowl, whisk together eggs, cream (or milk), salt, and pepper. Gently fold in the flaked smoked salmon and chopped fresh dill.

Pour the egg mixture over the potatoes and onions in the skillet, spreading evenly.
