Step 1
Toast the slices of whole grain bread until golden brown.
Step 2
While the bread is toasting, bring a pot of water to a simmer and add a splash of vinegar.
Step 3
Crack each egg into a small bowl, then gently slide into the simmering water. Cook for about 3 minutes for poached eggs.
Step 4
In a bowl, mash the avocados and mix in lime juice, salt, and pepper to taste.

Spread the mashed avocado evenly over the toasted bread.

Remove the poached eggs from the water and place one on top of each slice of avocado toast.
