Step 1
Heat 1 tbsp oil in wok over high heat, add shrimp and cook until pink, about 2-3 minutes, set aside
Step 2
Add 1 tbsp oil to wok, scramble eggs until just set, break into small pieces, set aside
Step 3
Add remaining oil, add minced garlic and stir-fry for 30 seconds
Step 4
Add cold rice and break apart any clumps, stir-fry for 2 minutes over high heat
Step 5
Add soy sauce and oyster sauce, toss to coat all rice grains evenly
Step 6
Add peas and stir-fry for 1 minute until heated through
Step 7
Return shrimp and eggs to wok, toss everything together for 30 seconds
Step 8
Drizzle with sesame oil, season with white pepper, garnish with scallions and serve
