Step 1
Blanch brisket and beef bones in boiling water for 2 minutes, drain and rinse well
Step 2
Char onion and ginger under broiler until blackened, about 3-4 minutes
Step 3
In large pot, bring water to boil, add cleaned bones, brisket, charred onion and ginger

Add star anise, cinnamon, cloves, and coriander seeds, bring to simmer
Step 5
Simmer gently for 2 hours until brisket is very tender
Step 6
Remove brisket and let cool slightly, then slice thinly against the grain
Step 7
Strain broth through fine sieve, season with fish sauce and salt
Step 8
Cook fresh noodles according to package directions, divide among bowls
Step 9
Ladle hot broth over noodles, top with sliced brisket, herbs, and accompaniments
