Step 1
Preheat the oven to 350°F (175°C).
Step 2
In a skillet, heat olive oil and sauté chopped onion and minced garlic until translucent.

Add diced chicken and cook until browned, about 7-10 minutes.

In a large bowl, mix cooked chicken, rice, cream of chicken soup, mixed vegetables, salt and pepper.
Step 5
Pour the mixture into a greased baking dish and top with cheddar cheese.
