Step 1
For the filling: In a skillet, brown ground beef over medium heat. Drain excess fat. Add chopped onion, minced garlic, Scotch bonnet, thyme, and curry powder. Cook until onion is softened, about 5 minutes.

Stir in breadcrumbs and 0.5 cup water. Simmer until liquid is absorbed and filling is moist but not wet. Season with salt and pepper. Let cool completely.

For the dough: In a large bowl, whisk together flour, turmeric, and salt. Cut in cold butter and shortening using a pastry blender or your fingertips until pea-sized crumbs form.

Gradually add ice water, mixing until dough just comes together. Do not overmix. Form into a disc, wrap in plastic, and chill for at least 30 minutes.

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

On a lightly floured surface, roll out the chilled dough to about 1/8-inch thickness. Cut out 5-6 inch circles using a round cutter or bowl.

Place a spoonful of the cooled beef filling on one half of each dough circle. Fold the other half over to create a semi-circle. Crimp the edges with a fork to seal.

Place patties on the prepared baking sheet. Brush the tops with beaten egg wash.

Bake for 20-25 minutes, or until golden brown and flaky.
