Step 1
Soak glass noodles in hot water for 10-15 minutes until soft. Drain well and cut into shorter lengths.
Step 2
In a bowl, combine soy sauce, oyster sauce, sesame oil, white pepper, and chicken stock to make the sauce.
Step 3
In an oven-safe clay pot or deep pan, layer the bottom with sliced pork belly, then half of the ginger, garlic, and cilantro roots.
Step 4
Place the soaked glass noodles over the aromatics, then arrange the prawns on top of the noodles. Add the remaining ginger, garlic, and cilantro roots.
Step 5
Pour the prepared sauce evenly over everything. Cover the pot tightly with a lid or foil.
Step 6
Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until prawns are cooked through and noodles have absorbed the sauce. Alternatively, steam on a stovetop over medium heat.
Step 7
Garnish with chopped spring onion before serving.
