Step 1
Marinate chicken thighs with salt, pepper, cayenne, and thyme for at least 30 minutes.
Step 2
In a large pot, heat vegetable oil over medium heat. Add chopped onions and garlic, sauté until golden brown.

Stir in tomato puree and bell pepper, cook for 10 minutes until the mixture thickens.
Step 4
Add rice and 4 cups of water to the pot. Bring to a boil, then reduce heat and cover. Cook for 20-25 minutes.
Step 5
Meanwhile, grill marinated chicken on medium heat for about 15 minutes, flipping halfway through until fully cooked.
Step 6
Serve Jollof rice with grilled chicken on the side. Enjoy!
