Step 1
Cut chicken thighs into thin strips. In a bowl, combine 0.5 cup coconut milk, fish sauce, turmeric, curry powder, and sugar. Add chicken, toss to coat, and marinate for at least 1 hour, or overnight. Soak wooden skewers in water.
Step 2
For the peanut sauce: In a saucepan, whisk together peanut butter, 0.25 cup coconut milk, lime juice, soy sauce, brown sugar, red curry paste, and water. Heat over low-medium heat, stirring until smooth and warmed through. Set aside.
Step 3
Thread marinated chicken onto the soaked skewers.
Step 4
Preheat grill or grill pan to medium-high heat. Lightly oil the grates.
Step 5
Grill chicken skewers for 3-4 minutes per side, until chicken is cooked through and has nice char marks. You can brush with remaining marinade during cooking.
Step 6
Serve immediately with the warm peanut sauce.
