Step 1
Preheat your oven to 375°F (190°C).
Step 2
Chop zucchini, eggplant, bell pepper, and tomatoes into 1/4-inch slices.
Step 3
In a skillet, heat olive oil over medium heat and sauté chopped onion and garlic until translucent.
Step 4
Add tomatoes to the skillet and simmer for 10 minutes, seasoning with thyme, salt, and pepper.

Layer the sliced vegetables in a baking dish, pouring the tomato mixture over the top.

Cover with foil and bake for 35 minutes. Remove foil and bake for an additional 10 minutes.
