Step 1
Prepare the Béchamel sauce: Melt butter in a saucepan, whisk in flour to make a roux. Cook for 1-2 minutes.

Gradually whisk in milk until smooth and thick. Season with nutmeg, salt, and pepper. Set aside.
Step 3
Preheat oven to 200°C (400°F). Lightly toast bread slices. Spread Béchamel on one side of each slice.
Step 4
Assemble sandwiches: Place a slice of ham and some Gruyère between two Béchamel-spread bread slices. Top with more Béchamel and Gruyère.

Bake for 10-15 minutes, or until cheese is melted and bubbly and bread is golden brown.
