Step 1
Place poha in a colander and rinse gently under cold water for a minute until softened but not soggy. Drain well and set aside.
Step 2
Heat oil in a pan. Add peanuts and fry until golden brown. Remove and set aside.
Step 3
In the same oil, add mustard seeds and let them splutter. Add curry leaves and green chilies, sauté for 30 seconds.
Step 4
Add chopped onion and sauté until translucent. Stir in turmeric powder and a pinch of salt.
Step 5
Add the rinsed poha, sugar, and the fried peanuts. Mix gently until all ingredients are well combined and the poha is heated through.
Step 6
Turn off the heat, drizzle with lemon juice, and garnish with fresh coriander.
