Step 1
Cook rice vermicelli according to package directions, drain and cool

Make peanut sauce by whisking peanut butter, hoisin, lime juice, fish sauce, minced garlic, and warm water until smooth

Fill shallow dish with warm water, submerge rice paper for 20 seconds until pliable
Step 4
Place softened rice paper on damp towel, layer lettuce leaf on bottom third
Step 5
Add small handful of vermicelli noodles, mint, cilantro, and one shrimp halved lengthwise
Step 6
Fold bottom edge over filling, then fold in sides and roll tightly away from you
Step 7
Repeat with remaining rice papers and filling ingredients
Step 8
Serve spring rolls immediately with peanut dipping sauce
