Step 1
Press the tofu for at least 15 minutes to remove excess water. Crumble the pressed tofu into a bowl.
Step 2
Heat olive oil in a large non-stick skillet over medium heat. Add diced onion and cook until softened, about 5 minutes.
Step 3
Add minced garlic and cook for another minute until fragrant.
Step 4
Add the crumbled tofu to the skillet along with nutritional yeast, turmeric, black salt, soy sauce, and black pepper. Sauté, stirring gently, for 5-7 minutes until heated through and slightly browned.
Step 5
Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
Step 6
Taste and adjust seasoning if needed. Garnish with fresh parsley and serve warm.
