Step 1
Combine pork slices with soy sauce, fish sauce, sugar, garlic, and lemongrass. Marinate for at least 30 minutes, or up to 2 hours.
Step 2
Prepare pickled carrots and daikon (if not store-bought) and slice cucumber and jalapeño.
Step 3
Mix mayonnaise and sriracha to make a spicy mayo spread.
Step 4
Grill or pan-fry marinated pork slices until cooked through and slightly caramelized, about 3-4 minutes per side.
Step 5
Warm baguettes in the oven if desired. Slice lengthwise, but not all the way through.
Step 6
Spread spicy mayo generously on both sides of the baguette. Layer with grilled pork, pickled vegetables, cucumber slices, cilantro, and jalapeño.
Step 7
Serve immediately.
