Step 1
If using wooden skewers, soak them in water for at least 30 minutes. In a bowl, combine chicken cubes with lemon juice, 1/4 cup olive oil, 3 minced garlic cloves, oregano, salt, and pepper. Marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
Step 2
Prepare tzatziki: In a separate bowl, mix Greek yogurt, grated cucumber, dill, 1 minced garlic clove, 1 tbsp lemon juice, salt, and pepper. Chill until ready to serve.
Step 3
Thread marinated chicken onto the soaked skewers.
Step 4
Preheat grill or grill pan to medium-high heat. Grill chicken skewers for 4-6 minutes per side, turning occasionally, until chicken is cooked through and lightly charred.

Warm pita bread on the grill or in a dry skillet for 1-2 minutes per side.

Serve chicken souvlaki immediately with warm pita bread and a generous dollop of tzatziki.
