Step 1
Prepare the pesto: In a food processor, combine basil, pine nuts, Parmesan, and garlic. Pulse until finely chopped. With the processor running, slowly drizzle in the olive oil until smooth. Season with salt and pepper to taste.

Grill the chicken: Season chicken breasts with salt, pepper, and a drizzle of olive oil. Grill for 6-8 minutes per side, or until cooked through and internal temperature reaches 74°C (165°F). Let rest for 5 minutes, then slice.
Step 3
Cook the penne: Cook chickpea penne according to package directions until al dente. Drain well.
Step 4
Combine: In a large bowl, toss the cooked chickpea penne with the desired amount of pesto. Add the sliced grilled chicken and toss to combine. Serve immediately.
