Set up double boiler with simmering water in bottom pot
Step 2
Whisk egg yolks and sugar in top bowl of double boiler
Step 3
Place bowl over simmering water and whisk constantly for 2 minutes
Step 4
Slowly pour in Marsala wine while whisking constantly
Step 5
Continue whisking for 8-10 minutes until mixture is pale, thick, and reaches 160°F
Step 6
Remove from heat and whisk in vanilla extract
Step 7
Pour into serving glasses and serve immediately with savoiardi cookies
