Step 1
Cut beef into bite-sized pieces. Prepare vegetables: chunk potatoes, wedge onion, slice carrots.
Step 2
In a large pot or Dutch oven, heat vegetable oil over medium-high heat. Brown the beef quickly, then remove and set aside.
Step 3
Add onions to the pot and sauté until softened, about 3-4 minutes. Add carrots and potatoes and stir for another 2 minutes.
Step 4
Return the beef to the pot. Add dashi stock, soy sauce, mirin, and sugar. Bring to a simmer.
Step 5
Reduce heat to low, cover, and simmer for 20-25 minutes, or until potatoes are tender. Stir occasionally.
Step 6
If using, add green beans during the last 5 minutes of cooking. Adjust seasoning to taste.
Step 7
Serve hot, optionally with steamed white rice.
