Step 1
In a bowl, combine teff flour, yeast, salt, and half of the water. Mix until smooth.
Step 2
Cover and set aside for 2-3 days at room temperature to ferment.
Step 3
After fermentation, add remaining water and baking soda. Mix well.
Step 4
Preheat a non-stick skillet over medium heat.
Step 5
Pour a ladle of batter into the skillet, swirling to create a thin layer. Cook until bubbles form, about 2-3 minutes, then cover to steam for 1-2 minutes.
Step 6
Repeat with remaining batter, stacking cooked injera on a plate. Serve warm.
